overcooling brick 200

hi all- i have a 1990 240 and it is running to cool. i replaced the thermostat with the same kind 87 or 88c. the guage is not the problem. it only runs up to 1/3 on the guage, always used to run at 1/2. a funny thing happened today while i was driving home, i accelerated to pass a car and it run up to 4500 rpm and then all the sudden i have the proper temp. back in the middle where it should be. it stayed that way the rest of the way home. is it my fan clutch? i checked the posts and only could find simptoms of a fan clutch causing a overheat condition. thanks for the help-scott
