EVIL STALLING PROBLEM - ANY ADVICE 200 1981

This is the second catalitic converter that's been on this car. The first one was clogged, so I took it off and smashed out the catalist with a hammer and chisel. The entire concerter was nothing more than a hollow pipe and worked great. A few months later I put a good one on to make it "legal" it still seems to work fine. It flows fine, but there seems to be a large amount of moisture in the exhaust from sitting. Also the O2 sensor is unplugged. When it's plugged in it runs worse, so I unplugged it several years ago and has not been a problem, at least not till now. It was also on it's second O2 sensor then.
