Cold start stalling 200

I posted recently re cold start problems and got a few responses stating that it could be the coolant temp sensor. Brought it in the shop, they didn't even check the sensor. After fixing the flame trap and some hoses which didn't do anything about the problem they said the valves have a lot of carbon built-up and I should put some cleaner in the fuel tank which would clean them up like new, and the stalling would stop. I feel like I'm being taken for a ride here. Can anyone confirm this? Also, if the oxygen sensor breaks, is a car still drivable? What happens?
