Wiring up relays! 200

I've recently installed an electric fan on my 240 Turbo. Its from a pick & pull yard so instructions didn't come with it. I picked up a 2 speed fan so I'll have a built in spare if needed. I recently added a 3 row Nissens radiator and it came with a screw in thermostat. All instructions suggest wiring power thru a relay. My question is why thru a relay and how? I frequent a yard that allows all relays, solenoids, etc. free of charge so I have a vast supply of used relays, so which one to use and how. Thanks for any and all suggestions -Gary
