Cooling fan question(s) 700 1989

Two questions on my '89 740GLE 16V:
#1. Should the electric cooling fan mounted in front of the AC condenser come on when the AC is on OR just when coolant temp sensor in the radiator says it's too hot?
#2. Is there any danger in bypassing the coolant temp sensor and jumpering the two gray/red wires so the fan is ON when the ignition is on? If the fan is ON it provides better air flow over the AC condenser and makes the AC blow colder air at idle. Just don't want to create a problem with the fan running 100% duty. Thanks....
