Questions reguarding 134A air conditioning

Usually there is no remote high side and you will be lucky to find an accessible low side which is all you need starting with an empty system.
The fill post is S on the compressor, the driver's side one. Volvo system capacity is specified in the green manuals and mine is at home. It will be something like 1200 grams or so but that is from memory. About 4 cans, I would think for the modern 900 system (48 oz. X 28 gms/oz.). The flow rate of a vacuum pump is not too informative unless the maximum vacuum it will pull is also given. You should be OK with a 1 hour evacuation or so.
