Coolant temp sensor 7.5k ohms, flooding, questions.. 71 142E 140-160 1971

Guys, my newly purchased 71 142E was running great the first few days, but now she is running very rich. I have all the books and checked every wire back to the ECU and documented it. The only one out of spec is the coolant temp sensor. It is about 25C in my garage, and it reads 7.5K ohms. From the chart in my books, this would be the correct reading for about -10 C. It should read about 2.0-3.0K, from the charts.
So, the sensor is telling the ECU that we are in Siberia in December, right?
It is not that cold in Arkansas in June.
Is this causing my problem? By the way, the temp gauge on the dash does not work either. They both seem to use the same sensor.(at least I think)
