DIY valve reconditionning help needed 200 1979

Hello all,

I am presently cleaning heavy deposits on the valves from my 160 cylinder-head (B21F) prior to lapping them. I notice the valve faces, combustion chamber side, have concentric rings and a thin black coating on them. Do I have to preserve those features or may I "mirror-polish" the valves to match my polished combustion-chambers?
