temp fluctuation? 200 1987

The other night I noticed that the temp needle was almost in the red. I have had no previous problems with the temp since I owned this car. When it was right about to go red it slowly began to fall back to normal temperature. I figured the thermostat was stuck shut and needed replaced. Changing the coolant was already on my list of things to do, so I flushed it and after a battle with the lower hose clamp that was rusted and the head snapped off from turning it and I had to get in there with a few different tools and you get the picture, I won. :) I replaced the thermostat and all semed well. I drove the car around all day but tonight it did the same thing. When I saw it going up toward the red I pulled over to feel the top hose to see if it was hot, and it was, extremely hot and so was the top of the radiator. Once again after it was so close to the red it came down some. Could this be a fualty temp sensor? I don't see any leaks or noise from the pump to indicate that it is bad. I have noticed every once in a great while the temp sensor will not work until to turn the car off and back on, and then it works fine. Aything else I can look at? Should I replace the temp sensor and see if that is it before I move on to anything else? I'm not sure how difficult that is, but I am willing to take a shot. Thanks!
