780 low idle 700 1989

My 780's idle has been noticably low for some time, however, it recently started stalling in hot weather when going down to idle at a light, etc- I apply the break, the RPM's drop like a rock, and either suddenly bounce to 1000 and then rest at 500 or the car just stalls. I have heard this might be a dirty throttle body, or the IAC. Although I dont know how much the IAC costs, I would imagine it is prohibitive to replace it. I would like to check out the throttle body, but would also like to learn a little more about removing it first. Do I need to replace the seal after I take it off or perform any other general maintainence on it when I remove the thing (besides removing oil and carbon)? Are there any unusually sensitive parts I should be aware of? I have the chiltons manual but am unsatisfied with the description of the process that they include.
