What is the right temperature in the coolant expansion tank .. I burnt my ***** finger off!!! 700

I had a problem with the coolant gauge on the diesel, this turned out to be the thermostat which is now replaced and problem fixed. However, both before and after I replaced the thermostat, the coolant in the expansion tank is tepid even after a long, fast run but in the petrol turbo, the coolant is very hot indeed, I burnt my finger. The coolant temp gauge is always steadily in the middle although when I bought it, the radiator was leaking and so I drove it for a mile or two without any coolant. The replacement radiator put in by my mechanic also leaked and so my wife overheated the car and killed of the water pump. This has now been replaced and the car runs fine again but what is this difference in temperature.
