Electric Fan Conversion Question 200

Happy Holidays!
I will be converting to an electric fan early next week and have a few questions. I found a virtually new radiator with the temp sensor in the upper part of the radiator and have fitted an electric fan from a late model GM car onto this replacement radiator to provide cooling.

My question is this - what are my options for controlling the fan starting and stopping? Apparently Hayden makes an adjustable controlled switch with a sensor mounted in the radiator fins. Can I simply cut the wires on a Hayden fan control and splice into the existing temp sensor in the radiator? I intend to run the power to the fan motor from my battery, so the car will continue to cool when the engine is stopped, if needed.

What are my options for an automatic starting / stopping of the fan, as I don't wish to rely on a toggle switch / manual operation.

Any and all assistance is greatly appreciated....
