Barry,

What is the difference in symptom between running with the AMM disconnected and running with it in circuit?

The reason I ask this, is you have virtually eliminated the ECT and FPR unless some mistake was made in the tests you performed.

The only indications the ECU has for placing the injector duration program in limp home mode (when you disconnect the AMM) is the lack of mixture pot ( 5 volts on that line ) and the lack of hot-wire voltage or AMM output - something like 0 volts on that line. A defective AMM or connector problem could easily mimic those conditions.

I sure wish you could try a known good air mass meter.
