fuel pressure 1800 1972

I have an 72 1800E with d-jet FI and it works perfectly most of the time. But when I restart the car while it is still hot from being driven earlier the fuel pressure starts to bounce up and down wildly and the car starts to run like crap. It takes about 3 minutes of driving for this to clear up. Could this be vapor lock and if so why? Maybe a stuck injector? The fuel pump is fine and the injectors only have about 8000 miles on them. I checked the pressure with a guage while the problem was happening, and when it was not. I did not notice a bleed down of pressure after I killed the engine so I don't think that I have a leaky injector but can't completely rule that out. Any thoughts?
