Head resurfacing.

I am going to do a valve job over the next couple of weeks (I don't have much free time). This includes bring the head to the machine shop for a resurface job. While I am there what else should I have them do? They quoted me 30 bucks so I have some extra cash for some extra work. What is the correct term for having the valve gound and reseated? If I have the valves ground can I remove them first (to clean them) or do they need to be in the head?

I am going to adjust the valves, replace the absorbers, and valve stem seals as well as replace the cam with a peppier one (VX as long as it isn't interference).
