Temp gauge crazy/dead 700

Hello all,
The other day I was driving along and noticed that the temp. gauge was dead. After consulting the almost worthless haynes manual, I located the temp. sensor for the gauge and tried to un-hook the plastic connector but I couldnt get it loose. My first question is how do I get this connector apart and second, what are the symptoms of a bad sensor. My gague will usually work at startup for a couple of minutes but then while I'm driving it dies and no amount of banging on the dash will bring it back. Any advice would be appreciated. Thanks in advance.

Its funny how coolant hoses that looked fine last week look like they could go at any second when you have a non-working temp gauge.
