I had the same craziness and just found my problem... 700

My temp guage was crazy for quite a while. It was always fine when I start the car and then after 15 minutes or so would go crazy (0 to mid temp very rapidly) and then stop working.

Turned out it was a loose wiring harness connector. The harness in my car was on the drivers side by the firewall. It was zip tied to a brace so I had to cut the tie to see it was loose.

I doubt that this is your problem but it is a very simple thing to check. No tools required either.
