K-Jetronic or KE-Jetronic? Or is it one of those newfangled Digifant motors (which IIRC is more or less LH-Jetronic)?

I'd be suspicious of the extra (KE-Jetronic) electronic gizmos for sure. Grab a Bentley (they seem to make lots of VW manuals) and test stuff.

Perhaps a vacuum leak.

Is it running real rich when it feels like stalling? If so, maybe the control pressure regulator (warmup regulator) is on its way out. I believe you'll need special fittings to hook up a fuel pressure gauge.
