A rattling noise and a temperature hike( She's killing me...) HELP! 200 1982

I thought I had it all figured out...a new in-tank fuel pump, clean the flame trap, and the iac, and the throttle body, a tune-up and she would be ready to roll. Now she has this strange rattling underneath her, similar to when you place a stick in the spokes of a bicycle. The noise is most noticeable between 15-25 mph. And I noticed that her temperature has been going up, not incredibly fast, and it hasnt overheated, but rising all the same. Originally, I thought it might be my catalytic converter. But maybe my head gasket is going.

My question is, what do you think? And what is the difference between a head gasket and a valve cover gasket?
