wiring harness 200

I'm looking to replace the wiring in my car just to keep it running well and keep the gremlins at bay. However there are a lot of things that aren't in the car and I hate having things laying around not to mention I enjoy doing the work myself since it leaves me more familiar with the car and more capable in a bad sit. So is there anyplace where I can buy the electrical connections to build a new harness. The car definately needs one but I want to make sure there is an organized and sensible approach to how everything is placed, that and I plan on adding stainless steel wire covers to make the engine look better and don't want random wires everywhere.
