You can grab the hood, and you'd need the lights and grille too if you want to make yours into a flat hood. I'd grab the hood hinges as well, since they have a tendency to bind and break on all these cars.
If the car has any interesting options, such as cruise control or power mirrors, they would be worth getting. MAybe winter floor trays if it has them. Good mudflaps are hard to find, and they keep your quarter panels intact so they'er a good thing. You'll have to evaluate the condition of your interior pieces and see if any are better- it's all pretty easy to take out.
