a/c temp switch rheostat 200 1988

Couple things. First, I am no expert, but willing to tell you what I know. Second, that thing with the knob is not a rheostat, it does something else. Third, the wire that senses temperature is actually a small tube, maybe with R12 inside it.

The tube is placed along the outlet of the expansion valve, and it tells the control something about the temperature. Then control somehow allows the expansion valve to be open wider or narrower, and that controls evaporator temperature.

With a little luck another BBRDer will have more accurate information.
