overheating but temp gauge reads fine 700

My 90 740 GL kept trying to, and a couple of times succeeding, to boil over. The other half of my concern is that the temp needle on the dash sits right at the normal point.
Is this the sign of a bad sending unit? Is there much involved in changing it out?
On this B-230F, is there a trick or any usual trouble with bleeding air out of the cooling system?
Looks like I'm doing a thermostat right away, what else specific to this car should I be looking at?
