Stalling Fixed via Throttle Body Adjustment, but I have questions... 200 1990

I fixed the occasional stall and rough idle by adjusting the throttle body using IPD directions. About two months ago, I cleaned the TB but evidently I did not adjust it correctly. When I adjsuted it this week, it was very dirty again. Why is this?

I also just changed the flame trap which was pretty oily. Could this have contributed to the problem? Or, are they just dirty. Why is there oil (too much, I don't know) in the hose behind the TB? Finally, what does the AMM do?
