another redundant temp question 120-130

hi again, is 200F too hot? i've replaced the thermostat(180F), replaced the radiator cap, but my temp gauge still reads just above 2/3rds; doesn't go over the top, but creeps up at a stop light. bought a digital meat thermometer, stuck it in the radiator and the top tank reads 200F. it's a pretty much stock B20 with the weber conversion, i set the timing to 16BTC with vacuum off; so i think that's ok; might be running a little lean, but the tail-pipe hasn't turned gray from black yet... beginning to wonder about the head gasket but i'm not losing or gaining fluids anywhere that i can see. any ideas, or am i concerned over nothing?
