Weird temp readings 700

Two days in a row I have had weird readings from the temp gauge. It reads normal levels for some time, then it creeps up til near red. Each time this has happened I have stopped the car and checked coolant. When I start the car up again the temp gauge goes fast up to red, then after some time it goes back to normal. The waterpump is new, and I still have plenty of oil left. And it's almost winter here. So, is this just a failing sensor/gauge, or do I have engine trouble?

The car is a 85' 740GL with a B230a engine.
