Which thermostat to install (different temperatures)?

This one might be a no-brainer, but in any case... ;-)

What are the (dis)advantages of one temperature coolant thermostat over the other? The dealer sells a high and a low (sorry, I don't have the exact temps handy).

I live in Ottawa, ON, CANADA, where we get freezing winters and hot summers.
