How do I turn off the check engine light? 700 1991

Monday evening 10/27/2003 after getting off route 95 on the way home from work....Car coughed and sputtered then the idle started fluctuating from normal 5-600 up to 1500 and back after a short jaunt on the highway. Didn't really think too much about it. Thought the sputtering might be a little water in the gas or something that in turn caused the computer to try to normalize things. (Don't really know if that is how the computer works, but it sure sounds neat!) When the fluctuating idle did not stop, I did what I always do when I don't know what to do...I pulled the connector off the AMM. I let the car cough and die...restarted it, plugged the AMM back in and the thing has been running fine ever since.

Now the check engine light is on and I need to turn it off.

In addition, what would cause the cough/sputter/fluctuating idle in the first place?
