Need your opinion... My Head is pitted 700

I was just informed that I need a head gasket and that the head is severely pitted. First off, how does a head become badly pitted? My mechanic is sending it off to a machine shop to correct the problem. He stated that it wouldn't make any sense to install a new gasket with the current condition of the head. What will change in regards to the reliability of the car once this is done? Assuming it’s done correctly. I take very good care of the car, 3k oils changes and preventative maintenance. The car runs great, no oil leaks, however the reason the gasket is being replaced is because I noticed anti freeze leaking between the head and the block under the manifold. The car was not over heating at all and ran smooth. What should I expect after the repair. I want to keep this car for a while; it only has 156K and its in great shape. I'm not interested in buying a newer car because I don't trust them. Over the three years that I've owned the car I replaced a lot of wear and tear items. The car has a lot of new parts. I guess am a little nervous when my engine is being taken apart and the consequence that going with it after the fact. What are your thoughts?
