how to adjust valve clearance and how spark plugs affected engine temp.??? 120-130

as far as valve clearance i read the haynes manual and couldn't figure it out. how do i know when one valve is at its greatest clearance height and then how do i turn the engine to get the others to their greatest height to adjust them? turning the fan belt wouldn't work. if you could give good descriptions it would help me, i've never opened up the engine before so i don't know many of the basics.

also i changed my spark plugs n wires. the spark plugs are longer, the old ones must have barely been in the cylinder head. they are also meant to run hotter than other plugs to prevent the heavy carbon build up on the old plugs. but now my car is running hotter and i don't know why. the radiator fluid is occasionally, at least once a trip, running out of the overflow tube, hitting the engine and burning into a sweet stink. i don't get it or what to do?
