New Parts, still too rich! 200 1989

Following the advice of many postings, I cleaned out the throttle body and the flame trap, installed new plugs, cap/rotor, air cleaner, wires and fuel pressure regulator. I also cleaned out the O2 sensor, but still has a rough idle and sooty exhaust and the MPG is terrible.
She was running fine for ever with worn componenets and runs terrible with new ones!!! I did unplug the O2 sensor and to my surprise the exhaust wasn't sooty nor smelly and the idle evened out- what happened?
Please advise on what to do next- I have a 2500 mile trip to California coming up...
