As for fitting 195/65/15 tires on 740 wheels or Hydra wheels with equally tall tires, it will not be a problem. A taller tire (25") on a wheel with more back spacing will still fit under the front spring seat w/o rubbing the strut tube.

Go for it, Hydra wheels fit the 240 just fine. 205/55/16 is a very common tire size that will work well. 215/45/16 if you want something that handles a little better.
