A dumb gasoline question - how long can it be stored? 200 1981

My 81 245 has been sitting for 3 years now. I replaced the wiring harness in 2001 and drove it about a week. It sat for one year before that. It had a full tank at the time. Ever since the new harness, it would stall when putting it in gear. The flame trap is clean. I've replaced the CIS tee, the Cap & rotor, new plugs, wires, and turned up the idle a bit. I've un plugged & plugged in the O2 sensor. It starts up perfect, idles good (a bit high now) and will run decent until I put it in drive. If I keep my foot on the gas for a second when engaging drive it won't stall otherwise it dies. Once it's in gear and running, it's OK and the idle drops down.
Could the gas have gotten weak from sitting? My only other thought is a vacuum leak from the upper manifold or the rubber bellow between the upper & lower may be leaking. Since it was removed and A shop re-assemble it for me after the new harness, could they have screwed something up? Unfortunetly the're out of business now. Any Ideas?
