B230FT t-stat questions, temp and brand? 700

I'm planning on swapping out some of the cooling system parts this weekend, including the t-stat and maybe the tank/tank hose and heater valve. However, I've found conflicting information on the t-stat and am wondering if someone who knows can provide the answers regardingthe following.

1. What temperature should I use? 88c? I've found 82c, 87c, and 92c t-stats that are apparently for my brick, but I think the 87c/88c stats are for the turbos, right? And 82 is the tropical/hot enviro t-stat?

2. Is there a preferred brand of t-stat that's more reliable, etc.? The two listed with the place I buy my parts (importec) are Wahler and one that has "France" stamped on it that I'm assuming is a Vernet (the brand name I found listed for the t-stats offered by FCP). Any experience with either? The walher is more expensive, but does it matter or is it more reliable?

p.s. the Wahler stat looks like its made of brass (image below) or something, while the no name brand (assumed verner) is silver and I assumne steel...?
