I'll reply to the stuff that I have experience with. There's others on here who can answer all of it.
As far as a high pressure port goes, mine doesn't have one either since it was retrofitted to R134. This is stupid to me and its making life a little harder for me right now while I'm trying to fix it again because its harder to troubleshoot with just the low side readings. While you've got the system evacuated you could always add a high side port. I may go this route yet once mine is evaced.
I hope that if you're replacing the compressor, you're also replacing all o-rings that you'll touch.
If yours is like my 92, your orifice is located on the pass. side frame rail after the condenser. I put a Variable Orifice Valve in mine on the advice of others on this board for improved performance. I don't know if it works because the A/C system didn't work before I got the car and so the first time I ran it with the VOV was the first time I'd ever experienced this car's A/C performance.
The accumulator should be replaced anytime you open your system. The replacement that I got posed a problem when refilling because there was not room for the pressostat between the accumulator and the coil and so the system had to be filled and then the pressostat was moved to the fill port. This further complicates my ability to connect gauges to the system.
