Another AC question for the experts 900 1995

My 1995 945T has been having some AC problems. I had a small leak that developed into a large leak, which I had fixed within the past 2 months. The V Shop replaced the evaporator under the dash and the silver canister out in the engine bay (total cost $1200) and everything seemed to be working OK.

But over the past several weeks, I will be driving along and the AC will just stop being cold. I found that if I hit the gas hard, the system would start working again but then stop cooling after a while. This morning, I pulled over when it stopped cooling and found the AC lines not cold and the compressor clutch not turning, even though the AC was on. So I drove for about a half mile pretty heavy on the gas and the AC started cooling. I pulled over and the lines were ice cold and compressor clutch is turning like it should.

I have already searched the site here but couldn't find the answer.

So what would cause the compressor clutch not to turn when the AC is on?

Why would the clutch engage under heavy acceleration?

Is the electric fan really supposed to be on at all times when the AC is on, because when I pulled over the second time to check the AC (when it was cold) the fan was not on when I popped the hood but it turned on shortly thereafter?
