Stall and restart frustration. 200

Last night I was driving my ’89 245 dl back from Maine, which is about a 100 mile trip for me, one way. As I was leaving one of the toll booths I felt a little bucking and pulled over, thinking it was going to stall. It was dark and cold and the engine kept running, so I kept driving down the freeway.
The same symptom about 20 miles later… except it did stall. Sitting on the side of the road with the warning lights blinking I did what any not-wanting-to-be-broken-down driver would do in such a circumstance. I tried it again. It turned over nice and strong, but that’s it…until about 10 minutes passed and I turned it over for about the sixth time. Then it started. So I drove it…for about another 20 miles and it stalled in the same manner. While following the same pattern of waiting and turning it over I reached down and turned all the fuses. (I had also changed the fuel pump relay, but that didn’t make any noticeable difference.) I don't know if the fuse turning was related but it started again and I was able to drive another 8 miles home.
During these 2 stall and restart episodes it did not over-heat.
Can anyone tell me what would cause symptoms like this?

What I’ve done to it recently includes:
Changing the AMM.
Total tune up.
Changing flame trap.
New starter.
New brushes in alternator.
Changed fuel sending unit.
Changed all fuses.
New brakes all around.
Changed thermal sensor in air box.
Installed new battery.
New thermostat.
Cleaning throttle body.


Could this be related to that little door in the air filter box and/or the thermal sensor in the box? I forgot if I left that little door on the box open or closed when I change the sensor.

Please don’t let me think that if I take any kind of a lengthy trip that I should take my seemingly more reliable ’68 122!
