carb replacement - extras to do? 120-130

It's christmas present time for my 122S and a pair of reconditioned SUs has come up fairly cheaply that I am going to buy.

Can you recommend other things in that area of the car that could be usefully checked/replaced while the carbs are out?

I'm hoping that this will go some way to improving the lack of pull I experience on hills at speed. Even with a B20 and C cam my speed would drop from 75-80 to about 55-60 on motorway hills, even when I floor the pedal. What is the next best place to look for improvements, cam, exhaust? At present I have a 2-into-1 header and stock downpipe. Should I just replace the downpipe with a bigger bore or do I have to replace the whole thing? Noise is an issue so presumably I stay with the existing 2 mufflers. Thanks, as ever.
