'91 740T Cooling System 700

Having blown (2) hoses and not cooked the motor, I've now replaced all cooling system hoses. One thing that I did note was that when the hoses blew(green cap) the aux. a/c fan did not operate (I have bridged it and it does operate).
On a 740T, should it activate in an 'overheat' situation with a/c off or only operate when the a/c is on?
Also, I don't thrash the car, but how important is the coolant pressure?
Should I replace the green cap with a black or white?
