It sure sounds like you just need to adjust for a bit more fast idle...the burbling/gurgling/dying is what happens when the plugs get loaded up due to enrichening without raising the idle enough...when you then pull out and step on it, the further enrichening downright bogs down the motor until it finally clears and gets going. I suggest you start by adjusting the fast idle screws (right there in the middle, riding on the fast idle cam:

Chocke adjustment is kindof a thing of preference...but I adjust mine so that when fulled I get about 1/4" of jet lowering (both), and the idle running up to between 1500 and 1800... and since I don't really want the idle that high immediately after a cold-start, I will usually back the control down a bit right after it catches...The manual choke on a becarbed Volvo is not really something which should be left alone (unless you have it set just right, starting, and going back in the house as it warms up is rare). Since you've had work done on your carbs, it now a matter of getting them adjusted back to where your old ones were, and getting them to do the same thing...this will take some adjusment...seeing how it runs under various conditions, making some more ajustments, seeing how it runs...etc. Lather, rinse, repeat, enjoy!

I usually back off the choke slowly, and fully by the time the temp needle leaves the cold peg...but I still drive gently until the engine is up to running temp...then rock and roll!

I think you're a bit proccupied with "washing down the cylinder walls"...if the cylinder is firing at all, there's not too much to be concerned about.
