Can I relocate the back adjust knob on the front seats to the other side?

I've only done this on 86-87 vintage seats, but yes, this works.
If you take everything apart, you'll be able to swap the backrest knobs to the opposite side so they don't hit the center parking brake console.

I drove my 86 for years with a passenger seat rebuilt into a driver's seat this way.

If you retain driver's seat upper fabric, you can keep the lumbar knob on the right side- that piece is easy to swap to the other side of the frame. You'll see a couple screws to swap the bracket over.
