According to the Haynes manual (82-91 740 & 760), there are two choices: One is called type 1 and the other type 2. Type 1 opens between 187-190F. Type 2 (which would be hotter) opens between 196-199F.

It appears that IPD (www.ipdusa.com) sells both. Their catalog shows one for the 700 series that opens at 191F and one that opens at 197F.

I would would probably also check the temperature sensor and temperature guage.
