Some time ago I read that if the dished part of a piston is a mirror-shape of the CC (or the quench areas) you would have more turbulence caused by squish. I mean that the quench areas correspond with the high parts of the piston. When the air trapped in between them rushes out, you will then get 2 vortices (or a double vortice so to speak). But this would mean cutsom pistons offcourse...
I myself was looking into dished piston since I will be building a 2100cc B20 using a E-head and decked block. Using flat tops and leaving the CC as is would yield in a compression ratio of 11.7 : 1 which is a tad high... If in my case I would use dished B21 piston (being 12cc like you said) the compression would be around 10.2 : 1, which is actually lower then what I want. Hmmm.
I also have (far away future) plans on building a turbo B20. I wouldn't use a big bore either, just stock B20 bottom, low compression, high boost... ;)
About the shakedown problems; they can be quite frustrating sometimes. I once drilled a hole in the tunnel to be able to reach in there btw. And yeah, I don't like those rubber gaskets either, prefer to use the cork ones.
