caliper/rotor replace: how does the brake fluid system work? 200 1982

so I've bought new calipers and vented rotors for my 82 244 GLT turbo- I've got the rotors off, and I hung the calipers from the springs with a piece of wire. They are still connected to the brake lines... here's where I get confused. when I remove (unscrew) the brake lines from the old calipers I should expect brake fluid to come out right? is it high pressure? can I switch that line straight into the new caliper while the fluid is coming out? (or will there be no fluid because there is no pressure on the brake pedal) I know I'm supposed to bleed the line when I'm done- I picked up a brake bleeding kit from Schucks ( I wish I had enough time to wait for the IPD kit to come) but the resevoir carries only... 4 oz or something, and I can't figure out where to place that in line...
also is air in the brake line detrimental to the system... or just cause bad breaking? (I was thinking if I couldn't figure out the bleeding procedure I'd drive it over to the shop around the corner and have them do it) anyway- its probably not that hard, my manuals just don't explain in in-depth. thanks
