Wheels, spacers and offset. 120-130

Could someone explain the concept of wheel offset to me please? I bought some 15x7 Wrangler rims (forgot the year) for my ’68 122 sedan.
I had to get 1” spacers for the front to clear the front dust caps and ½” spacers to clear the rear casting bolts. I am planning on getting 185/70/15 tires for the front and 215/70/15 tires for the rear (although I plan on getting some studded tires for the back when winter comes around again). I got the tire sizes from the guy who rebuilt a very cool looking 122 wagon featured on the Volvo Adventures (could not locate a pic at this time) Web site. I think his rims are somewhat different (the same size, however), but I remember reading some warnings about ruining susspension components when messing with offset, if indeed that’s what I’m doing.
Will I be changing the “offset” with this set up? The rims with spacers seem to fit OK, but I haven’t tried to stuff any tires on yet.
