cooling system problems 200 1981

hello, this is my first post.
I have an 81 242dl that I am having issues with. I just went through the engine bay and replaced all the seals, belts, hoses, etc and now it's acting like the thermostat isn't opening. I have replaced the water pump, radiator and heater hoses, temp sender, and am now on the second thermostat, and when I run it, the temp just keeps climbing up into the red. I filled the block before putting the thermostat in, so I don't think I have air in the system. Before I pulled everything apart, the gauge was reading cooler than normal, and I never overheated. This is driving me nuts, and I need the car running so I can get to work. Help!!
