A/c recharge using interdynamic gauge

Hello,
I bought recharge kit from wall mart. The kit contains: A container which includes 11 onces of 134a and, i believe, 2 ounces of ester oil. The kit also contains a gauge(its color coded)and of course a fitting for connecting to the system.
My question is: how do I know how much coolant is in the system, and how much to add.

Also is recharging a fast process, or is it something that should take a long time.

The guage has color coding that indicates Low, filled, warning, danger. I have hooked this gear to my system. the only thing that I have observed happening is the needle on the gauge going up an down, from top of the zone labeled low, to the middle of the zone labeled filled. Up and down and up and down. I dont understand. Im getting fairly good cooling up to a certain temp. I just want to make sure the system is filled.
