Tom,

The clunk is usually a torque rod (one of the upper arms) shifting a bit where it meets the body. No cause for alarm, and very common.

I don't know the actual specs for how far you should be able to rotate a rear wheel before it takes up slack in the diff, but I'd say 1/10 of a turn or so is fine. There should be a tiny amount of endplay as well.

80w90 or 85w140 gear oil is fine for the rear end. Hypoid oil is only necessary if you have a limited slip diff.
