Gary,
I am sure that you are safe in terms of piston to valve clearance, as we take .200 off a head and run a high lift cam, sometimes with a doomed piston, and usually don't have valve to piston problems, but two things are missing from your question and this discussion.

1) racers always actually measure clearances to be sure and it would take less time than having this discussion.

2) Valve to piston clearance is largely determined by valve timing, and you have not mentioned that. It is affected by the degree to which the cam is advanced or retarded.
