I have done three 740 wagon headliners. You shouldn't have to remove flip up air dam or any tracks.
Here's my procedure:
1- remove main headliner ( won't go into details since you have done that )
2- turn on power to sunroof and open to rear vent position
3- from outside of car release the two rectangular spring clips holding the vent flap to the sunroof using a piece of coat-hanger or stiff wire with a small hook bent on one end
4- go back inside the car and run the sunroof vent back down and then open the sunroof about 1/3 to the rear
5- grab the front edge of the upholstered panel and pull it towards the rear, it should release from the sunroof shell and slide back in the track into the rear pan.
6- remove all but the two front hex head screws holding the sunroof pan to the roof, the rear end of the pan will now be hanging down, the rear drain hoses will keep it from falling all the way down
7- reach in from the rear with flashlight on hand and grab the sunroof headliner panel and cock it sideways in the track until you can get one of the rear right or left tabs free from the track, raise the panel a little with the two rear tabs free from the track and cock it sideways again to release the font two tabs from the track then slide the whole panel out from the rear of the hanging pan
* I don't know if you'll have room to do this if it's a sedan but if you have the whole sunroof pan out of the car already that won't be a problem
